As you will be aware The Food Safety (General Food Hygiene) (Butchers Shops)
Amendment (Scotland) Regulations 2000 come into force on 2 October this year.
Enclosed is a draft copy of guidance notes which accompany the Regulations.
The notes have been drawn up by both enforcement and industry representatives
and are intended to provide advice on the practical application of the Regulations.
Although they are intended mainly for use by enforcers, comments are also invited
from industry and other interested parties.
These draft notes have been sent in two parts:
General notes: Interpretation of the
Regulations
These provide a general interpretation of legal definitions and requirements;
Annex 1: Minimum acceptable standards
This provides
a step-by-step format for assessing both HACCP and strict physical separation
prerequisites as well as general conditions. Examples of the forms which may be
used to assess compliance are also included. The Agency has made a public commitment
to providing clear and concise guidance which both enforcement officers and butchers'
themselves will understand. The final document must reflect this commitment. The
Agency would therefore welcome comments from all parties with a view to achieving
this aim.
The draft notes are also available on the Agency website.
